“Forged Katai” “Carving” knife has a long, narrow blade that ensures less resistance when cutting meat or fish, and also less sticking to the edges. Great for slicing. Unlike many “Forged” series, “Forged Katai” knives are made of Japanese VG10 steel, with a hardness of 60 Rockwell. All Forged Katai knives are handmade with 5 layers, a blade thickness of 2 mm, and a cutting angle of 18 degrees. We provide a 10-year warranty.
